We have been making the most of the heatwave this week, if you can call the sun deigning to appear and not give way to hailstorms for three days straight a ‘heatwave’. Having spent a weekend in Holland where it was so bitterly cold we were forced to buy chips for warmth (or so we justified it), it seemed an absolute coup to come home to brilliant bright sunshine.

There’s No Place Like Home Cornbread

We were away last week. We went on holiday over a long weekend, and ate gorgeous food, and coveted beautiful houses, and met brilliant people, and saw more paintings of 17th century militia than I previously thought possible. We get home late on Monday evening, and put the washing in the machine and slippers on our feet, and I move through my kitchen, touching things. Things that ground me. My chopping boards. My tea towels. My measuring cups. The little things that make our home, well, our home. And then I pick up a tin and a mixing bowl, and choose a knife. And I make cornbread.

It may seem churlish to find a problem with cranachan; as if I’m trawling perfectly acceptable British classics, and picking holes in them. But I promise you this isn’t change for change’s sake.

This isn’t desconstructing a crumble or reconstructing an eton mess or, god forbid, spiralising sprouts for your Christmas lunch. Really, it is enabling cranachan consumption. I will come clean: I am a cranachan enabler. This recipe simply provides a buttery, crumbly vehicle to enable you to eat more cranachan, quicker.
