What’s For Supper? Peach & Parma Ham Salad

‘It’s not a salad, Liv’ says Sam for what must be the fifth time this morning. ‘Stop calling it a salad’. Sam has very clear views on what constitutes a salad, and this, he insists on saying grandly and repeatedly, is not it. It is a salad, for what it’s worth, it just uses herbs rather than leaves (although that argument didn’t fly with Sam).

It doesn’t really matter what this is, as it’s a delight. A late summery treat, that tastes of holidays and sunshine. If I could have got my hands on burrata, I would probably have used that, and not torn it up, but instead gathered all the other ingredients around it on a platter, and then broken it whilst serving.

It is, really, too simple a recipe to be putting up here. In fact, I think it is the only recipe I’ve written to date that has no more than one step. But that was the point of the What’s For Supper posts. Quick, delicious, fuss-free. So here we find ourselves. With a salad-in-an-existential-crisis.

It goes like this:

Peach and Parma Ham Salad

Makes: Supper for two with bread, or a light lunch without
Takes: 5 minutes
Bakes: No time at all

1 peach
4 wides slices of parma ham
1/2 ball mozzarella
A handful of mint leaves
A handful of basil leaves
A tablespoon of olive oil
A teaspoon of balsamic vinegar
A pinch of coarse salt

1. Slice the peach into segments. Place haphazardly on a plate, alongside torn strips of parma ham, and crumbs of mozzarella. Scatter the mint and basil leaves evenly throughout the dish. Drizzle with olive oil and balsamic, and sprinkle with coarse salt.

2. Ta Dah!

We ate this, scooping the components up onto chunks of sourdough, peach juices running down our chins. It almost took less time to eat than it did to make.
